For 3-4 servings: ½ kg potatoes, cubed ½ kg frozen peas 2 peppers, chopped 4 onions, chopped 4 tomatos, chopped 2 cm ginger, grated ( 1 tsp ginger powder) 2 teaspoons turmeric 2 teaspoon mustard seeds 1 teaspoon garam masala fresh chilli / chilli powder, to taste 1 tablespoon tomato pasta 2 tablespoons oil salt Cook the potatoes in water with 1 teaspoon of turmeric. Drain the water. Heat the oil in a pan and add the mustard seeds. As they begin to pop add the onion and the green peppers. 1 cauliflower oil to grease the oven tray 2 tablespoons breadcrumbs For the bechamel sauce: 500 ml unsweetened soy milk 5 tablespoons flour 5 tablespoons oil 2 tablespoons nutritional yeast salt, pepper Cut the cauliflower into florets, wash and cook  in water with a little bit of salt. Drain. Heat the oil in a saucepan, add the flour and fry for 1-2 minutes, stirring continuously. 1 kg potatos 150 g pickled cucumbers 3 spring onions (optional) 4-5 tablespoons vegan mayonnaise (see the recipe here) salt and pepper Peel the potatoes, cut them into  pieces and boil them in water with a little bit salt. When the potatoes are cooled, add finely chopped green onions, sliced ​​cucumbers, mayonnaise, salt and pepper. Serve as an appetizer.

For 3-4 servings: 1 kg potatoes 3 large onions, finely sliced 100 g olives 2 bell peppers, finely sliced 10-15 pickled gherkins, sliced 1 cup vinegar from the pickled gherkins 3-4 tablespoons olive oil salt and pepper In a large bowl mix  the onions with salt, add the vinegar and the olive oil. Mix well. Set aside. The onions will soften. Cook the  potatoes (whole, don’t cut them). Cut the potatoes in pieces while they are still hot. Add to the bowl and mix well. Set aside to cool. For 4-5 servings: 1 kg new potatoes 3 tbsp. olive oil 3 tablespoons balsamic vinegar dill, finely chopped salt and pepper, to taste Wash the potatoes well  to remove any dirt and cook whole without peeling. Drain the water and leave to cool. Cut the potatoes lengthwise into four. Mix the olive oil, the vinegar, salt and pepper and pour over the potatoes. Add the dill and mix carefully.

For 4-5 servings: 1 kg  peas (fresh or frozen) 1 kg potatoes, cubed 2 large onions, finely chopped 1 kg tomatoes, finely chopped / 2×400 g cans diced tomatoes 1 bunch of dill, finely chopped 1 tbsp. oil salt and pepper Stir fry the onions in oil for 1-2 minutes. Add the potatoes, fresh peas and 1 glass of water. Stir occasionally. Cook for 10 minutes than add the tomatoes. If you use frozen peas add them along with the tomatoes. When the potatoes and peas are done add the dill, salt and pepper to taste. Serve with salad.

Potato croquettes

1/2 kg potatoes 150 g flour 1 tablespoon oil spices (dried oregano / dried basil/ cumin), to taste salt and pepper, to taste oil for frying Cook de potatoes in water with a pinch of salt. Drain and mash. Allow to cool a little bit. Add the flour, oil and the spices. Mix well. Form little balls (or any shape you like) and fry in hot oil until golden. Drain and set aside. Stir fry the onions and the garlic in oil until golden brown. Add the potatoes, paprika powder, chili powder (optional), salt and  pepper and stir fry for 2-3 minutes. Serve as a garnish and/or with  salads or  pickles.
