For 4 servings: 1 kg sauerkraut, finely cut 100 g smoked vegan bacon (or smoked tofu), finely cut 2 bay leaves 10-15  peppercorns 5 allspice berries (juniper corns) 2-3 tablespoons olive oil Rinse the cabbage  with cold water to remove the excess of salt. Put the sauerkraut  in a saucepan, add the bay leaves, peppercorns, juniper corns and  the vegan smoked bacon (or the smoked tofu). Add water enough to cover. Cover and simmer on medium heat until the cabbage is done and the water has evaporated (if needed  add a little bit more water on the way). At the end add the oil and mix well. Vichyssoise soup

For 4-6 servings: 1 onion, finely chopped 2 large  leeks, sliced 3 medium potatoes, cubed 1 cup unsweetened soy milk 1 tablespoon olive oil salt and pepper, to taste parsley or chives, for garnish Heat the oil in a soup pan  and add the onion. Stir fry for about 2-3 minutes then add the leeks. Cover  and simmer for a few minutes, stirring occasionally. Add the potatoes and 3 cups of water. Cover and simmer. When the vegetables are cooked add  the soy milk, salt and pepper. Let it cook for 1-2 minutes. Blend/process  until you get a smooth cream. Garnish the dish with finely chopped parsley or chives . Serve cold or warm.

For 10-12 servings: 26 cm spring form 400 g vegan marzipan / fondant, different colors, for icing and ornaments For 1 leaf (prepare 2) : 300 g flour 3 tablespoons cocoa 150 g raw sugar 125 ml sunflower oil 375 ml soy milk 2 tsps. baking powder a pinch of salt Mix all the ingredients until the sugar has dissolved. Grease the spring form with a little bit of oil. Pour the mix into the form and bake  (in the preheated oven) on medium heat, for 30-40 minutes. Check with a straw if the dough is baked inside, if the dough sticks to the straw bake for a few minutes longer.

Vanilla ice cream

For 4 servings: 2 cups soy milk 250 ml soy  cream 1/2 cup raw sugar 2 teaspoons vanilla extract (or 1 sachet vanilla sugar – 9g ) 3 teaspoons locust bean gum powder Put all ingredients in blender or food processor and blend until smooth and the sugar has dissolved. Put the composition in the ice cream maker or pour it into a container with a lid and place it in the freezer. After about an hour remove from the freezer and mix well, with a spoon (to prevent  crystals formation). Repeat the process 2-3 times. It can be served plain or with various toppings (for this one I used  sour cherries in syrup).

For 4 servings: 250 g rice noodles 1 lettuce 4 carrots 5 green onions 1 fennel 10-15 radishes 1 big cucumber  (or 5-6 small) chili, to taste (optional) 3-4 tablespoons sesame seeds 5 tablespoons soy sauce the juice of one lemon (or 3 tablespoons rice vinegar) 1 cm ginger, grated 2 cloves of garlic, mashed Prepare the rice noodles as directed on the package. Drain and set aside. Chop all the vegetables finely. Prepare a dressing mixing the soy sauce, lemon juice (or rice vinegar), ginger and garlic. Mix all ingredients in a bowl. For 4 servings: 350 g tempeh 4-5 tablespoons soy sauce 3 tablespoons Chinese 5 spices 4-5 tablespoons sweet chili sauce 3-4 tablespoons sesame seeds 4-5 tablespoons oil, for frying Mix the soy sauce and spices. Cut the tempeh  into slices approx. 1-1.5 cm thick. Pour the mix over tempeh, spread evenly and leave to marinate, in the fridge, for a few hours. Heat the oil in a pan and add the tempeh. Fry on both sides until brown. Pour the sweet chili sauce and add the sesame seeds, stir to  evenly cover the tempeh. Tip: Serve with rice noodles salad. Note: for weight loss bake the tempeh in oven, without oil.

2 cups soymilk 250 ml soy creamer 1/2 cup raw sugar 3 tablespoons cocoa powder 2 teaspoons vanilla extract 2 tablespoons arrowroot powder Dissolve the arrowroot powder in 1/2 cup of soymilk. Set aside. In a saucepan mix the remaining soymilk, soy creamer and sugar, stir frequently on low heat and bring to boil. Remove from heat and add the arrowroot mixture, cocoa powder and vanilla extract. Pour into a container with a lid and leave to cool in the refrigerator for 1-2 hours. For 10 pieces: 10  rice paper sheets 200 g vegetables: carrot, cabbage, cucumber, green onion, bell pepper (red), cut julienne 1 cm ginger, grated 1 clove of garlic, mashed 2 tablespoons fresh lemon juice 2 tablespoons soy sauce 2 tablespoons fresh cilantro (or parsley), finely chopped Prepare a marinade of soy sauce, lemon juice, garlic and ginger. For an oven tray size 25/40 cm 350 g flour 150 g raw sugar 400 ml soy milk 75 ml oil 2 teaspoons baking powder 2 teaspoons vanilla extract a pinch of salt 1/2 kg apricots, cut in half Mix the flour with the baking powder and salt. Add the sugar and oil to the soy milk and mix until the sugar has dissolved. Pour it into the flour mixture, stirring constantly to avoid lumps forming. Grease the oven tray and coat with flour.
