For 3-4 servings: 150 g tofu, cubed 2 tomatoes chilli / chilli powder 2 cm ginger 4 tablespoons soy yogurt 1 tablespoon oil 1 teaspoon cumin seeds 1 tsp coriander powder ½ teaspoon turmeric ½ teaspoon garam masala 1 tablespoon flour fresh coriander and chilli for garnish (optional) Blend the tomatos, chilli/chilli powder (to taste) and ginger with a blender / food processor. For 2 servings: 150 g tofu 1 onion, sliced 1 pepper, sliced a handful frozen peas (optional) dill, finely chopped 1/2 teaspoon turmeric 1 tablespoon soy sauce 1/2 tablespoon oil salt and pepper Drain the tofu, crush it  with a fork, add the turmeric, dill, salt and pepper to taste and mix it all together. For 2-3 servings: 1 celery root 1 onion 3 tablespoons tomato puree 1 tablespoon oil salt and pepper seitan (optional) Peel, wash and cut the celery in medium size pieces. Stir fry the  finely chopped onion, 1-2 minutes, in oil.  Add  the celery and cover with water. When the celery is almost cooked add the seitan (optional), tomato puree, salt and pepper to taste. Continue cooking until the celery is done. Variation: You can add olives along with the tomato puree.

For 6 servings: 500 g beans 500 g vegetables for soup (carrots, onions, parsnips, celery, potato, peas, cauliflower, etc.) 500 g ripe tomatoes /  400 g canned tomatoes 2 tablespoons olive oil 1 bunch lovage/parsley salt and pepper Allow the beans to soak overnight. Wash and boil them in 3 l water. When the beans are almost cooked add the chopped vegetables. Continue to boil for 5-6 minutes and add the chopped tomatoes. When the beans and  the vegetables are well-done just add salt and pepper to taste. Garnish the dish with olive oil and finely chopped lovage/parsley.

For approx. 15 medium tomatoes: 200 g tofu 50 g of green olives, finely chopped (optional) dill, finely chopped 2 tablespoons olive oil salt and pepper, to taste Let the tofu drain. Blend until smooth. Add the olives, dill, the olive oil, salt and pepper and mix it with a wooden spoon until you get a fine paste. Cut the tops of the tomatoes, remove the core with a teaspoon and leave to drain upside down, for a few minutes. Fill each tomato with the tofu cream.

For 2 servings: 200 ml vegetable milk (soy, almond, hazelnut, etc.). 6 tablespoons chia seeds 1/2 tablespoon raw sugar/maple syrup (optional) 50 g blueberries Mix all ingredients, be careful not to crush the fruit. For 4-5 servings: 1.5 kg pumpkin1 onion1 carrot1 leek (white part)1 potato1 bay leaf 150 ml coconut milkolive oil (optional)salt and pepperClean all vegetables, peel, wash and cut them into medium size pieces. Cook them in a soup pan in enough water to cover them.When vegetables are cooked (15-20 minutes) blend/process them with a blender/food processor. Add the coconut milk and continue cooking for another 2-3 minutes. Add salt and pepper to taste.Garnish with a little olive oil.Variation: The soup can be served with croutons.

For 3-4 servings: 200 g red lentils 1 onion, finely chopped 2 carrots, sliced 1 potato, cubed 1 clove of garlic, finely chopped 2 bay leaves dried chilli flakes / chilli ½ teaspoon paprika powder 2 tablespoons tomato paste 1 tablespoon olive oil salt and pepper Wash the lentils thoroughly. Place the lentils in a soup-pan with 1 ½ liters water, the bay leaves and the onion. Simmer for 5 minutes then add the ​​carrots and the potatoes. When the lentils and vegetables are cooked add the paprika powder, chilli flakes to taste, the garlic and the tomato paste. Cook for another  2-3 minutes than add salt and pepper to taste. Garnish with a little bit of olive oil.
