For 4 servings: For the dough: 400 g flour 2 teaspoons dry yeast 200 ml water 4 tablespoons olive oil 1 teaspoon raw sugar a pinch of salt In a cup mix the yeast and sugar with little water. Let it rest until the yeast begins to ferment (approx. 10 minutes). Mix all ingredients and knead well. The dough must be soft and elastic but should not stick to your hands. Put the dough in a bowl, cover with a clean kitchen towel and let it rise for 2 hours. Knead again and let it rise for another hour (optional). For 4 servings: 4-5  leeks, sliced 2 teaspoons oregano 1 teaspoon basil fresh chilli / chilli flakes, to taste (optional) 2 tablespoons olive oil salt and pepper, to taste Heat the oil in a saucepan, add the leeks, chili, oregano and basil. Cover and simmer on medium heat, stirring occasionally. When the leek has softened add salt and pepper.

For 4 servings: 1 package spaghetti (500 g) For the sauce: 4 onions, roughly chopped 4 bell peppers, roughly chopped 1 kg ripe tomatoes, finely chopped a handful olives 3 teaspoons oregano 2 teaspoons basil 2 tablespoons olive oil 5-6 garlic cloves, mashed salt and pepper, to taste fresh basil for garnish Stir fry the onions in olive oil, for 3-4 minutes, stirring occasionally. Add the bell peppers and cook for another 2-3 minutes. Add the tomatoes, basil and oregano. Cover and simmer on medium heat, stirring occasionally, until the sauce has reduced. Finally add the garlic and olives and cook for another few minutes. Garnish with fresh basil.

For 4 servings: 1 kg potatoes, cut lengthwise in 4 2 bell peppers, sliced 1 onion, finely chopped 2 tomatoes, finely chopped (or 2 tablespoons tomato puree) 4-5 garlic cloves, finely sliced 2 teaspoons paprika powder a pinch of cumin 1 tablespoon oil salt and pepper, to taste Stir fry the onion in oil for 2-3 minutes. For 4 servings: 1 kg green beans, the ends trimmed and cut in half 2 large onions, finely chopped 5-6 large tomatoes, peeled and diced (or 1 can diced tomatoes) 1 bunch of parsley, finely chopped 2 tablespoons oil salt and pepper, to taste Stir fry the onions, in oil, for 2-3 minutes. For 4 servings: 350 g tempeh 4-5 tablespoons soy sauce 3 tablespoons Chinese 5 spices 4-5 tablespoons sweet chili sauce 3-4 tablespoons sesame seeds 4-5 tablespoons oil, for frying Mix the soy sauce and spices. Cut the tempeh  into slices approx. 1-1.5 cm thick. Pour the mix over tempeh, spread evenly and leave to marinate, in the fridge, for a few hours. Heat the oil in a pan and add the tempeh. Fry on both sides until brown. Pour the sweet chili sauce and add the sesame seeds, stir to  evenly cover the tempeh. Tip: Serve with rice noodles salad. Note: for weight loss bake the tempeh in oven, without oil.
