150 g soybeans 3 bay leaves 3 tablespoons olive oil 1 teaspoon mustard juice of one large lemon 1 small onion, finely chopped salt, to taste Soak the soybeans overnight. Wash them and cook them with the bay leaves. Drain but keep a little bit of the moisture. Mash the cooked soybeans with a food processor (or mash crusher) until you obtain a  paste (not very smooth). Add a little moisture if needed (2-3 tablespoons). Put it in a bowl, add the olive oil, mustard, lemon juice and whisk. At the end add the chopped onion and salt. Mix well. You can serve it on bread/crackers with olives. Note: you can use more/less of mustard/lemon juice to your taste.

For approx. 10 pieces: 500 g flour 3 teaspoons dry yeast 250 ml warm water 25 ml sunflower oil 50 g raw sugar 1/2 teaspoon salt 150 g sesame seeds Mix 2 tablespoons of sugar with the yeast in half of the amount of water. Allow to rest 10 minutes until the yeast begins to ferment. Mix all ingredients in a bowl, to obtain a dough. Knead the dough at least 5 minutes. Semolina pudding

For 1 serving: 300 ml vegetable milk 3 tablespoons semolina 1-2 tablespoons raw sugar (to taste) jam Put the milk into a pan and heat. Sprinkle in the semolina stirring continuously to avoid lumps form. Add the sugar and cook slowly, stirring from time to time, for approx. 5 minutes (or conform indicated on the package). Garnish with jam and serve warm. Nice like dessert but also like breakfast.

For the dough: 3 cups flour ½ cup oil ½ cup sugar ½ cup water 15 g baking powder salt For the filling: 1-1 ½ kg apples ½ cup raw sugar 2 teaspoons cinnamon Peel and core apples, grate on a box grater. Add the sugar and the cinnamon and mix it. Drain off apple juice. Meanwhile prepare the dough mixing all the ingredients, if it is too hard then add a little water. Divide the dough into two equal parts and roll on to the tray size. For 2 servings: 150 g tofu 1 onion, sliced 1 pepper, sliced a handful frozen peas (optional) dill, finely chopped 1/2 teaspoon turmeric 1 tablespoon soy sauce 1/2 tablespoon oil salt and pepper Drain the tofu, crush it  with a fork, add the turmeric, dill, salt and pepper to taste and mix it all together. Fry the onion in oil, for 2-3 minutes. Add the pepper and the ​​peas and fry it further. Then add the tofu en cook it for another 2-3 minutes, stirring occasionally. Finally, add the soy sauce.

For 5-6 pieces: filo dough 250 g tofu 4-5 tablespoons raw sugar 100 g raisins soaked in brandy 2 tablespoons brandy Drain the tofu well and then blend him with the sugar and the brandy until you get a very fine paste (using a blender / food processor). Add the raisins and mix. Place 3-4 sheets of filo dough one upon another, brush them with a little bit oil and fill with 3-4 tablespoons of tofu composition. For 2 servings: 200 ml vegetable milk (soy, almond, hazelnut, etc.). 6 tablespoons chia seeds 1/2 tablespoon raw sugar/maple syrup (optional) 50 g blueberries Mix all ingredients, be careful not to crush the fruit. Allow to rest for approx. an hour until the chia seeds increase in volume. You can also use other kind of  berries or strawberries.

1/2 kg flour 125 g margarine 1 cup soy milk 125 g raw sugar 15 g dry yeast ( 40 g fresh yeast ) 1 tsp. vanilla essence zest of an orange / lemon (optional ) saffron / a pinch turmeric (optional, for the color) Mix the saffron/turmeric with the soymilk.
