For 4-6 servings:

1.5 kg potatoes, peeled and cut in half
1 kg sauerkraut, finely chopped
10-15  peppercorns
2 bay leaves
2-3 tablespoons olive oil

Cook the potatoes, sauerkraut, bay leaves and peppercornsin water enough to cover. Cover and simmer on medium heat.

When the vegetables are cooked drain the water ( kept it separately), remove the bay leaves and mash. Add some water (from the potatoes and sauerkraut), little by little, until you get the consistency of a puree.

Add the olive oil and mix well.

Serve as side dish with soy, seitan, tempeh, etc. (in the picture above it is served with lentil burger).

Variation: you can add a few tablespoons of nutritional yeast.

Note: Stamppot is a traditional Dutch dish and consists of mashed potatoes mixed with various ingredients like sauerkraut, carrots+ onions, kale, etc.zuurkoolstamppot

Se pun cartofii, varza, frunzele de dafin si boabele de piper, la fiert, in apa cat sa acopere. Se acopera cu un capac si se fierbe la foc mediu.

Cand legumele au fiert se scurg de apa  (care se pastreaza separat), se scot frunzele de dafin si se paseaza. Se adauga apa in care au fiert, putin cate putin, pana cand obtinem consistenta unui piure.

Se adauga uleiul de masline si se amesteca bine.

Se poate servi ca si garnitura pentru diverse preparate din soia, seitan, tempeh (in imagine este servita cu burger din linte).

Variație: se pot adăuga cateva linguri de drojdie inactivă.

Bratkartoffeln – german style fried potatoes

For 4-6 servings:

1 kg potatoes
2-3 large onions, finely sliced
100 g smoked vegan bacon (or smoked tofu), finely cut
2 – 3 tablespoons olive oil
salt and pepper, to taste

Peel the potatoes and boil them whole. Drain the water and cut the cooked potatoes into slices.

Heat the oil in a saucepan  and add the onions. Fry on medium heat, stirring occasionally, until the onions soften.

Add the vegan bacon (or smoked tofu), potatoes, salt and pepper. Stir occasionally, taking care not to crush the potatoes.

Pentru 4-6 portii:

1 kg cartofi
2-3 cepe mari, taiate fin
100 g sunca vegana afumata (sau tofu afumat), taiata marunt
2-3 linguri ulei de masline
sare si piper, dupa gust

Cartofii se cojesc si se fierb intregi. Se scurg de apa si se taie feliute.

Intr-o tigaie/cratita se incinge uleiul si se adauga ceapa. Se caleste la foc mediu, amestecand din cand in cand, pana cand ceapa se inmoaie.

Se adauga sunca vegana (sau tofu afumat) si cartofii si se potriveste de sare si piper. Se amesteca din cand in cand, cu grija sa nu strivim cartofii.

Este gata cand cartofii sunt putin rumeniti.

Se servesc ca garnitura sau/si cu salate (in poza de mai jos sunt serviti impreuna cu varza calita in stil german).

Per 4-6 porzioni:
1 kg di patate
2-3 cipolle grandi, tagliate a fettine sottili
100 g di bacon vegano affumicato (o tofu affumicato), tagliato finemente
2-3 cucchiai di olio d’oliva
sale e pepe, a piacere
Pelate le patate e fatele bollire intere. Scolate l’acqua e tagliate le patate cotte a fette.
Scaldate l’olio in una padella ed aggiungete le cipolle.
Fate soffriggere a temperatura media, mescolando di tanto in tanto, finché le cipolle non si ammorbidiscono.
Aggiungete il bacon vegano (o il tofu affumicato), le patate, il sale ed il pepe.  Mescolate di tanto in tanto, facendo attenzione a non schiacciare le patate.
Il piatto è pronto quando le patate sono leggermente dorate.
Servite come contorno e/o in insalata (nell’immagine in basso le patate sono accompagnate da crauti alla tedesca).

For 4-6 servings:

1 onion, finely chopped
2 large  leeks, sliced
3 medium potatoes, cubed
1 cup unsweetened soy milk
1 tablespoon olive oil
salt and pepper, to taste

parsley or chives, for garnish

Heat the oil in a soup pan  and add the onion. Stir fry for about 2-3 minutes then add the leeks. Cover  and simmer for a few minutes, stirring occasionally.

Add the potatoes and 3 cups of water. Cover and simmer.

When the vegetables are cooked add  the soy milk, salt and pepper. Let it cook for 1-2 minutes.

Blend/process  until you get a smooth cream.

Garnish the dish with finely chopped parsley or chives .

Serve cold or warm.

Pentru 4-6 portii:

1 ceapa, taiata marunt
2 fire mari de praz, taiat rondele
3 cartofi medii, taiati bucati
1 cana lapte de soia neindulcit
1 lingura ulei de masline
sare si piper, dupa gust

patrunjel sau ceapa verde, pentru ornat

Se incinge uleiul intr-o oala si se adauga ceapa. Se acleste 2-3 minute apoi se adauga prazul. Se acopera cu un capac si se lasa la inabusit cateva minute, amestecand din cand in cand.

Se adauga cartofii si 3 cani de apa. Se acopera si se lasa la fiert.

Cand legumele au fert se adauga laptele de soia, sare si piperul. Se mai dau cateva clocote.

Se mixeaza totul cu ajutorul unui blender/mixer pana cand se obtine o crema fina.

Se orneaza in farfurie cu patrunjel/ceapa verde taiat fin.

Se poate servi rece sau calda.

Per 4-6 porzioni:
1 cipolla, finemente tritata
2 porri grandi, tagliati a fette
3 patate di medie dimensioni, tagliate a dadini
1 tazza di latte di soia senza zuccheri aggiunti
1 cucchiaio di olio evo
sale e pepe, a piacere
prezzemolo o erba cipollina, per guarnire
Fate scaldare l’olio in una pentola ed aggiungete la cipolla. Soffriggete per circa 2-3 minuti, quindi aggiungete i porri. Coprite e fate cuocere a fuoco lento per alcuni minuti, mescolando di tanto in tanto.
Aggiungete le patate e 3 tazze di acqua. Coprite e continuate a cuocere a fuoco lento.
Quando le verdure sono pronte, aggiungete il latte di soia, sale e pepe. Lasciate cuocere per 1-2 minuti.
Frullate/lavorate fino ad ottenere una crema omogenea.
Guarnite il piatto con il prezzemolo o l’erba cipollina tritati finemente.
Puo’ essere servita fredda o calda.

For 4-6 servings:

1 kg potatoes, peeled and cubed (or cut into wedges) 
4 onions, finely chopped
5 tomatoes, diced
250 ml coconut milk (canned)
chili / chili flakes, to taste
2 teaspoons mustard seeds
1 teaspoon coriander powder
1 teaspoon garam masala
2-3 curry leaves (optional)
1/2 teaspoon turmeric
salt, to taste

Heat the oil in a large saucepan and add the mustard seeds. Stir fry for 2-3 minutes until they begin to pop. Add the onion, chili and curry leaves. Cook for 2-3 minutes, stirring constantly.

Add the tomatoes and the rest of the spices. Cover  and simmer for about 5 minutesstirring occasionally.

Add the potatoes and coconut milk. If needed, add some water so that the potatoes are covered.

When the potatoes are cooked add salt to taste.curry cartofi

5 rosii, taiate cubulete
250 ml lapte de cocos (la conserva)
ardei iute/ fulgi uscati de ardei iute, dupa gust
2 lingurite seminte de mustar
1 lingurita coriandru pudra
1 lingurita garam masala
2-3 frunze de curry (optional)
1/2 lingurita turmeric
sare, dupa gust

Se încinge uleiul într-o cratiță și se adaugă semințele de muștar. Se prăjesc  2-3 minute până când încep să “sară”. Se adaugă ceapa, ardeiul iute si frunzele de curry. Se caleste timp de 2-3 minute, amestecand continuu.

Se adauga rosiile si restul condimentelor. Se acopera cu un capac si se fierbe aprox. 5 minute, amestecand din cand in cand.

Se adauga cartofii si laptele de cocos. Daca este nevoie se adauga apa astfel incat cartofii sa fie acoperiti.

For 4 servings:

1 kg potatoes, cut lengthwise in 4
2 bell peppers, sliced
1 onion, finely chopped
2 tomatoes, finely chopped (or 2 tablespoons tomato puree)
4-5 garlic cloves, finely sliced
2 teaspoons paprika powder
a pinch of cumin
1 tablespoon oil
salt and pepper, to taste

Stir fry the onion in oil for 2-3 minutes. Add the bell peppers, potatoes, paprika powder, cumin and water enough to cover the potatoes.

Cover and simmer on medium heat, stirring occasionally.

When the potatoes are almost cooked add the tomatoes (tomato puree) and garlic.

Add salt and pepper to taste.

Se caleste ceapa in ulei pentru 2-3 minute. Se adauga ardeiul gras, cartofii, boiaua dulce, chimenul si apa cat sa acopere cartofii. Se acopera cu un capac si se lasa sa fiarba la foc potrivit, amestecand din cand in cand.

Cand cartofii sunt aproape fierti se adauga rosiile (bulinoul de rosii) si usturoiul.

La final se potriveste de sare si piper.

For 4 servings:

1.5 kg new potatoes
garlic head, finely chopped
1 tablespoon rosemary (fresh or dried)
3 tablespoons olive oil
salt and pepper

Wash and boil the potatoes whole, unpeeled, for 10 minutes. Cut in half or quarters.

Put the potatoes in an oven tray, add the garlic, rosemary, olive oil, salt and pepper to taste. Mix well and bake at medium heat until brown and crispy.

Serve as side dish and/or with salad.

1 lingura rozmarin (proaspat sau uscat)

Cartofii se spala si se fierb intregi, in coaja, timp de 10 minute. Se taie in jumatate sau sferturi.

Se pun intr-o tava de cuptor, se adauga usturoiul, rozmarinul, uleiul, sare si piper dupa gust. Se amesteca bine si se coc la foc potrivit pana cand se rumenesc.

Se servesc ca garnitura sau/si cu salata.

Per 4 porzioni:

1,5 kg di patate novelle
una testa d’aglio, tagliata finemente
1 cucchiaio di rosmarino (fresco o essiccato)
3 cucchiai di olio d’oliva
sale e pepe

Pulite le patate e fatele bollire intere e senza sbucciarle, per 10 minuti. Tagliatele a metà o in 4 parti.

Disponete le patate in una leccarda da forno, aggiungete l’aglio, il rosmarino, l’olio d’oliva, sale e pepe a piacere. Mescolate bene e fate cuocere a temperatura media fino a che non siano dorate e croccanti.

Servite come contorno e/o con insalata.

Grilled tempeh with pasley potatoes

Per serving:

100 g tempeh, sliced ​​approx. 0.5 cm thick

For the marinade:

2 teaspoons soy sauce
1-2 cloves of garlic, mashed
1/2 teaspoon dried thyme
1/2 teaspoon dried oregano
1 teaspoon olive oil
pepper, to taste

Mix all ingredients. Pour over the tempeh and let it marinate in the refrigerator for at least 2-3 hours.

Heat the grill and grill the tempeh for a few minutes on each side.

For the potatoes:

150-200 g potatoes, peeled and cubed
parsley, finely cut
1 teaspoon olive oil
salt and pepper, to taste

Cook the potatoes in water with a pinch salt. Drain  and mix carefully with the other ingredients.

100 g tempeh, tăiat felii de aprox. 0.5 cm grosime

Pentru marinată:

2 lingurițe sos de soia
1-2 căței de usturoi, pisați
1/2 linguriță cimbru uscat
1/2 linguriță oregano uscat
1 linguriță ulei de măsline
piper, după gust

Se amestecă toate ingredientele. Se toarnă peste tempeh și se lasă la marinat, la frigider, pentru cel puțin 2-3 ore.

Se frige pe grătarul încins timp de câteva minute pe fiecare parte.

Pentru cartofi:

150-200 g cartofi
pătrunjel, tăiat fin
1 linguriță ulei de măsline
sare, piper ,după gust

Cartofii se curăță de coajă, se taie bucățele potrivite și se fierb in apă cu puțină sare. Se scurg de apă și se amestecă cu restul ingredientelor având grijă să nu-i zdrobim.

For 3-4 servings:

1 kg (2.2 lbs.) potatoes , peeled and cuted lenghtwise
3 onions, finely chopped
5-6 cloves of garlic, sliced
2 cans of diced tomatoes (2 x 400g/2 x 14 oz) / fresh tomatoes finely chopped
1 glass of white wine
3-4 bay leaves
1 ½ teaspoon thyme
10-15 peppercorns
2 tablespoon  olive oil
salt, to taste

Fresh parsley, finely cut

Cook the potatoes in water with a pinch of salt. Drain.

Stir fry the onions in oil for 2-3 minutes. Add the tomatoes, wine, bay leaves, thyme and the peppercorns. Simmer until the sauce is reduced, stirring occasionally. Add the garlic and the potatoes and continue cooking for another  3 minutes.

Garnish with parsley.

1 kg cartofi
3 cepe, tăiate fin
5-6 căței de usturoi, tăiați feliuțe
2 conserve de roșii tăiate ( 2x 400g)/roșii tăiate mărunt
1 pahar de vin alb
3-4 frunze de dafin
1 ½ linguriță cimbru
10-15 boabe de piper
2 linguri ulei de măsline
sare, după gust
pătrunjel, tăiat fin

Cartofii se curăță și se taie pe lung. Se fierb în apă cu puțină sare. După ce au fiert se scurg de apă.

 
Se călește ceapa în ulei, timp de 2-3 minute. Se adaugă roșiile, vinul, frunzele de dafin, cimbrul și boabele de piper. Se fierbe până când sosul scade, amestecându-se din când în când.  Se adaugă usturoiul și cartofii și se continuă fierberea încă aprox. 3 minute.

Se ornează cu pătrunjel.

For 4-5 servings:

1.5 kg (3 lb 3 oz) potatoes, peeled and cubed
2 onions , finely chopped
3-4 tomatoes, finely chopped / 1 tin diced tomatoes (400 g )
5-6 cloves garlic, finely chopped
2 cm fresh ginger, grated (1 teaspoon ginger powder)
1 teaspoon mustard seeds
2 tsp coriander powder
1/2 teaspoon turmeric
1 teaspoon garam masala
1/2 teaspoon chili powder, to taste
1 tablespoon oil
salt and pepper, to taste

Half cook the potatoes. Drain and set aside.

Heat the oil in a pan and add the mustard seeds. Fry for 2-3 minutes until they begin to pop. Add the onions, stir fry for few minutes then add the potatoes, garlic, coriander, ginger, chili and the tomatoes (canned tomatoes). Cover and simmer on medium heat, stirring occasionally, until the sauce has reduced and the potatoes are done. Add the turmeric and the garam masala, continue cooking for another 2-3 minutes. Add salt and pepper to taste.

1,5 kg cartofi
2 cepe, tăiate fin
3-4 roșii tăiate mărunt/1 conservă de roșii tăiate (400 g)
5-6 căței usturoi, tăiați fin
2 cm ghimbir proaspăt, ras (1 linguriță pudră ghimbir)
1 linguriță semințe muștar
2 lingurițe coriandru praf
1/2 linguriță turmeric (curcuma)
1 linguriță garam masala
1/2 linguriță boia iute, după gust
1 lingură ulei
sare, piper după gust

Cartofii se curață, se taie bucățele potrivite și se fierb pe jumătate. Se scurg de apă.

Se încinge uleiul într-o cratiță și se adaugă semințele de muștar. Se prăjesc  2-3 minute până când încep să “sară”. Se adaugă ceapa și se călește câteva minute apoi se adaugă cartofii, usturoiul, coriandrul, ghimbirul, boiaua iute și roșiile (conserva de roșii). Se fierbe, la foc potrivit, până când sosul a scazut și cartofii sunt pătrunși, amestecându-se din când în când. Se adaugă turmericul, garam masala și se continuă fierberea încă 2-3 minute. Potatos (sauer) soup

1 kg potatoes, cubed
250 g soup vegetables  (onions, carrots, peppers, parsnips, celery, etc.), chopped
2 tomatoes, finely chopped
1 teaspoon paprika powder
lemon juice, to taste (optional)
lovage/parsley
2 tablespoons olive oil
salt, to taste

Cook the potatoes together with the onions, in enough water  to cover.

When the potatoes are half cooked add the other vegetables. Cook for 5 minutes then add the tomatoes.

When the tomatoes are cooked add the lemon juice and  more water, the paprika powder and salt to taste.

Garnish with fresh lovage/parsley and olive oil.

1 kg cartofi
250 g zarzavat pentru ciorbă (ceapă, morcov, ardei gras, păstârnac, țelină)
2 roșii
1 linguriță boia dulce
1 l borș/zeamă de lămâie
leuștean
2 linguri ulei de măsline

Cartofii se taie bucăți potrivite și se pun la fiert, împreuna cu ceapa tăiată mărunt, în apă cât să îi acopere.

Când cartofii sunt pe jumătate fierți se adaugă zarzavatul tăiat mărunt. Când legumele aproape s-au pătruns se adaugă roșiile tăiate foarte mărunt.

Când roșiile s-au înmuiat se adaugă borșul/zeama de lămâie (și apă, dacă se acrește cu zeamă de lămâie), boiaua dulce și se potrivește de sare.

La final se adaugă leușteanul tăiat fin și uleiul de măsline.ciorba cartoficiorba cartofi

250 g di verdura da minestrone (cipolle, carote, peperoni, pastinaca, sedano, etc.), tritata
2 pomodori, finemente tritati
1 cucchiaino di paprica in polvere
succo di limone, a piacere (opzionale)
sedano di montagna/prezzemolo
2 cucchiai di olio evo
sale, a piacere

Cuocete le patate assieme alle cipolle, in acqua sufficiente a coprirle.
Quando le patate sono a metà cottura aggiungete le altre verdure. Cuocete per 5 minuti, quindi aggiungete i pomodori.
Quando i pomodori si sono ammorbiditi aggiungete il succo di limone e un po’ d’acqua, la paprica in polvere ed il sale a piacere.
Guarnite con sedano di montagna/prezzemolo freschi e olio evo.
