For 2-3 servings:
200 g beans (black)
2 large onions, finely chopped
3-4 carrots, sliced
1-2 green pepper, chopped
3-4 cloves of garlic, mashed
1-2 tablespoons olive oil
1 bay leaf
1 jalapeno / chili, chopped (or to taste)
a pinch of cumin powder
1/4 teaspoon cocoa
1/4 teaspoon cinnamon
1 teaspoon oregano
1 can a 400 g diced tomatoes
salt and pepper, to taste
Soak the beans overnight. Wash and cook them with the bay leaf. Set aside.
Heat the olive oil in a saucepan and add the onions. Stir fry for a few minutes then add the green pepper, carrots, jalapeno / chili, cocoa, cinnamon and oregano. Cover and simmer for a few minutes, stirring occasionally.
Add the tomatoes, beans and garlic. Cover and simmer on low heat until the sauce has reduced and vegetables are cooked (if necessary add a little water from the beans).
Add salt and pepper to taste.
Variation: You can add various vegetables along with the carrots and green pepper (celery, mushrooms, etc.) and / or pieces of tofu.
Pentru 2-3 portii:
200 g fasole (neagra)
2 cepe mari, taiate marunt
3-4 morcovi, taiati rondele
1-2 ardei grasi, taiati bucatele
3-4 catei de usturoi, pisati
1-2 linguri ulei de masine
1 frunza dafin
1 jalapeno / chili, taiat marunt (sau dupa gust)
un varf de cutit cumin pudra
1/4 lingurita cacao
1/4 lingurita scortisoara
1 lingurita oregano
1 conserva a 400 g rosii taiate in bulion
sare si piper, dupa gust
Fasolea se la de cu seara la inmuiat. Se alege, se spala si se fierbe impreuna cu frunza de dafin.
Intr-o cratita se incinge uleiul de masline si se adauga ceapa. Se caleste timp de cateva minute apoi se adauga ardeiul gras, morcovii, jalapeno/chili, cacaoa, scortisoara si oregano. Se acopera si se inabuse timp de cateva minute, amestecand din cand in cand.
Se adauga rosiile in bulion, fasolea si usturoiul. Se fierbe la foc mic pana cand sosul a scazut si legumele sunt patrunse (daca este nevoie se mai adauga putin apa in care a fiert fasolea) .
Se potriveste de sare si piper.
Variatie: se pot adauga diverse legume o data cu morcovii si ardeiul gras (tije de telina, ciuperci etc.) si/sau bucatele de tofu.
