Brussels sprouts in tomato sauceMancare de varza de bruxelles Spruitjes in tomatensaus
For 4 servings:
1 kg Brussels sprouts, finely chopped
2 onions, finely chopped
2 tablespoons tomato paste
1 bunch of dill, finely chopped
1 teaspoon paprika powder
2 tablespoons oil
salt and pepper, to taste
Stir fry the onions, in oil, for 2-3 minutes. Add the cabbage and very little water. Cover and simmer, stirring frequently. Add more water if needed. When the cabbage is softened ( 5-6 minutes) add the tomato paste (diluted in 1/2 cup water) and paprika powder. Cook for another 2-3 minutes. Add salt and pepper to taste.
Garnish with finely cut dill.
Serve with polenta/bread or various dishes of tofu/soy/seitan.
Variation: You can add little pieces of smoked tofu.
Pentru 4 portii:
1 kg varză de Bruxelles, taiata fideluta
2 cepe, taiate marunt
2 linguri bulion de rosii
1 legatura mărar, taiat fin
1 linguriță boia dulce
2 linguri de ulei
sare si piper, dupa gust
Se călește ceapa în ulei timp de 2-3 minute. Se adaugă varza și foarte puțină apă, amestecandu-se din cand în cand. Se mai adaugă apă dacă este nevoie. Cand varza este aproape patrunsa (5-6 minute) se adaugă bulionul de rosii (dizolvat in 1/2 cana de apa) si boiaua dulce. Se lasă să mai fiarba inca 2-3 minute. La sfarșit se adaugă mărarul și se potrivește de sare și piper.
Se poate servi cu mămăligă caldă sau ca garnitură alături de diverse preparate din soia sau seitan.
Variatie: Se pot adauga bucatele de tofu afumat.
