200 g cooked kidney beans (you can use any type of beans) 2 tomatoes, cubed cucumber, cubed 1 (red) onion, finely sliced parsley, finely chopped dill, finely chopped (optional) hemp seeds (optional) juice from ½ lemon 1 tablespoon olive oil salt and pepper, to taste Mix all the ingredients in a bowl.

vegan mayonnaise (see the recipe here) 5-6 garlic cloves, mashed salt and pepper finely chopped chives (optional) Mix all ingredients. Optionally you can add finely cut gherkins.

1 measure (according to desired amount) unsweetened soy milk 2 measures oil (1 ½ parts sunflower oil,  ½ part olive oil) 1 ½ teaspoon mustard the juice from 1 lemon salt, to taste Place the soy milk in the blender, turn the blender on and slowly add the oil until it has the consistency of mayonnaise, if not add more oil. Finally  add the mustard, lemon juice and the salt.

Soy burgers

For 3 burgers: 50 g soy granules 150 ml water 2 tablespoons soy flour 1 tablespoon soy sauce 2 garlic cloves, diced 2 tablespoons ketchup (or tomato puree) 1 ½ teaspoon cumin powder 1 teaspoon coriander powder 1 teaspoon paprika powder 1 teaspon onion powder (or a small onion chopped very fine) 1 teaspoon locust bean gum salt and pepper, to taste Soak the soy granules  in 150 ml  water for 10 minutes (or as indicated on the package). Mix all the ingredients by hand, stirring until you get a paste. Let it rest in the refrigerator for at least an hour so the soy will  take the flavor of the spices . For the leaf: 3 cups flour 1 ½ cup raw sugar ½ cup cocoa 1 teaspoon of salt 2 teaspoons baking powder 3 tsp vanilla essence 150 ml sunflower oil 2 tablespoons vinegar 2 cups cold water   Mix the oil, water and sugar. Whisk until the sugar dissolves. Add the rest of the ingredients and mix everything thoroughly. The composition should have the consistency of the cream otherwise add a little bit more water/flour if necessary. For 4 servings:  500 g spaghetti 5 cloves of garlic, finely chopped dried chilli flakes / chilli, to taste 4 tablespoons olive oil salt and pepper, to taste Cook the spaghetti as directed on package. Drain. Stir fry the garlic and the chilli for 3 minutes in 1 tablespoon of olive oil. Add the spaghetti,salt and pepper and mix well. Turn the heat off and add the remaining olive oil. Serve hot.

For 4 servings: 12 slices of bread (ciabatta/baguette) 1-2 clove of garlic olive oil 2-3 tomatoes, diced basil, finely chopped salt and pepper, to taste Toast the bread slices on the grill /toaster/oven. Rub each slice of bread with garlic, drizzle with a little bit of olive oil, add  tomatoes, basil  and salt and pepper to taste.

For 2-3 servings: 1/2 kg potatoes, peeled and cubed 300g peas (fresh or frozen) 250 g cooked chickpeas 1 tin coconut milk 2 onions, finely chopped chili (fresh or powder), to taste 5-6 cloves of garlic, finely chopped 2 cm fresh ginger, grated (or 1 teaspoon ginger powder) 1 tsp. coriander powder 1 teaspoon turmeric 1 teaspoon garam masala 1 tablespoon oil salt and pepper, to taste fresh cilantro, finely chopped, to garnish (optional) Stir fry the onions in oil for 2-3 minutes. For 4 servings: 4 medium eggplants 200 g  brown rice 2 onions, finely chopped 2 carrots, grated 2 green peppers, finely diced 3-4 dried tomatoes, chopped 1 tablespoon oil fresh parsley, finely chopped salt and pepper, to taste Wash the eggplants and cut then in half, lengthwise. Using a small knife, cut a border inside each eggplant about 1 cm. thick. Using a teaspoon, scoop out the core.
