300 g pasta (farfalle) 1 can peas (400 g) 1 can sweet corn (300-400 g) 400 g pickled gherkins, finely diced 1 pickled red sweet pepper, finely diced (optional) 4-5 tbsps. vegan mayonnaise (see recipe here) salt and pepper Cook the pasta as directed on package. Drain and leave to cool. Drain the peas and corn well. Mix all ingredients.  Add salt and pepper to taste (and extra mustard if desired).

For 2-3 servings: 300 g cooked chickpeas 2 tomatoes, diced 1-2 cucumbers, diced 1 bell pepper, sliced 1 small zucchini, diced 1 red onion, finely sliced parsley, finely chopped 2 tablespoons olive oil the juice of half lemon salt and pepper, to taste Mix all the ingredients!

For 2-3 servings: 1 lettuce 2 tomatoes, diced 1-2 cucumbers, diced 1 sweet pepper, diced 2 green onions (or 1 red onion/shallot), finely sliced 300 g mushrooms,  quartered or sliced 4-5 garlic cloves, finely chopped parsley, finely chopped 2-3 tablespoons balsamic vinegar / lemon juice 1-2 tablespoons hemp seeds (optional) 2 tablespoons oil salt and pepper, to taste Stir fry the  mushrooms for about 6-7 minutes in oil,  until the moisture evaporates. Add the garlic, salt and pepper to taste and cook for another few minutes. In a large bowl prepare the salad mixing all the vegetables and season with vinegar/lemon juice. Add the mushrooms on top.

New potatoes salad

New potatoes salad

For 4-5 servings: 1 kg new potatoes 3 tbsp. olive oil 3 tablespoons balsamic vinegar dill, finely chopped salt and pepper, to taste Wash the potatoes well  to remove any dirt and cook whole without peeling. Drain the water and leave to cool. Cut the potatoes lengthwise into four. Mix the olive oil, the vinegar, salt and pepper and pour over the potatoes. Add the dill and mix carefully.

Couscous salad

For 2 servings: 1 small cup couscous 2 tomatoes, finely diced 2 cucumbers, finely diced 1 small onion, finely diced olives, sliced parsley, finely chopped fresh chili, finely sliced 2 tablespoons olive oil juice of one lemon salt and pepper, to taste Cook the couscous according to package directions. Allow to cool. Mix all ingredients.

Roasted pepper salad

sweet peppers (2-3 peppers per person) olive oil balsamic vinegar salt Wash the sweet peppers, dry with a kitchen towel and roast on the grill/oven, on each side, being careful not to burn. Put the roasted peppers in a pan, sprinkle with salt and cover. Allow them to rest for approx. 10 minutes  than peel them (dip your fingers  in cold water to release the peel). Prepare a sauce of olive oil, balsamic vinegar and salt. Pour over the peppers. Serve cold as salad, along with various dishes (rice, stews, etc.). Note: You can store the roasted peppers in sterilized jars for the winter.

For 2 servings: 1 cup barley 1 red onion, diced 1 large tomato, diced 1 bell pepper, diced 1 cucumber, diced 50 g olives fresh basil 1 tablespoon olive oil juice from 1/2 lemon salt and pepper, to taste Cook the barley in water  4 times the amount of barley (4 cups) for about 40 minutes. Allow to cool.  Mix all ingredients.
