Barley salad

For 2 servings:
1 cup barley
1 red onion, diced
1 large tomato, diced
1 bell pepper, diced
1 cucumber, diced
50 g olives
fresh basil
1 tablespoon olive oil
juice from 1/2 lemon
salt and pepper, to taste
Cook the barley in water 4 times the amount of barley (4 cups) for about 40 minutes. Allow to cool. Mix all ingredients.
