For 4 servings:
1 kg (8-9 pieces) bell peppers, sliced approx. 1 cm (1/2 inch)
1/2 kg (5-6 pieces) tomatoes, diced
2-3 onions, sliced
2 teaspoons paprika powder
1 teaspoon thyme
2 tablespoons olive oil
salt and pepper, to taste
In a saucepan stir fry the onions, in oil, for about 4-5 minutes. Add the bell peppers, paprika powder and thyme. Cover and simmer on medium heat, stirring occasionally.
When the onions and bell peppers have softened add the tomatoes. Continue cooking until the vegetables are done. Add salt and pepper to taste.
Serve as side dish, with salads, polenta, etc..
Per 4 porzioni:
1kg (8-9 pezzi) di peperoni, tagliati a fette di circa 1 cm (1/2
pollice)
1/2 kg (5-6 pezzi) di pomodori, tagliati a dadini
2-3 cipolle, affettate
2 cucchiaini di paprika in polvere
1 cucchiaino di timo
2 cucchiai di olio evo
sale e pepe, a piacere
In un tegame fate soffriggere le cipolle, nell’olio, per circa 4-5 minuti. Aggiungete i peperoni, la paprika in polvere ed il timo.
Coprite e fate cuocere a fuoco lento a temperatura media, mescolando di tanto in tanto.
Quando le cipolle e i peperoni si saranno ammorbiditi, aggiungete i pomodori. Continuate a cuocere fino a che le verdure non siano pronte.
Aggiungete sale e pepe a piacere.
Servite come contorno, con insalate, polenta, etc…
