For 4 servings:

1 package spaghetti (500 g)

For the sauce:

4 onions, roughly chopped
4 bell peppers, roughly chopped
1 kg ripe tomatoes, finely chopped
a handful olives
3 teaspoons oregano
2 teaspoons basil
2 tablespoons olive oil
5-6 garlic cloves, mashed
salt and pepper, to taste

fresh basil for garnish

Stir fry the onions in olive oil, for 3-4 minutes, stirring occasionally.

Add the bell peppers and cook for another 2-3 minutes.

Add the tomatoes, basil and oregano. Cover and simmer on medium heat, stirring occasionally, until the sauce has reduced.

Finally add the garlic and olives and cook for another few minutes.

Garnish with fresh basil.

Pentru 4 portii:

1 pachet spaghete (500 g)

Pentru sos:

4 cepe, taiate mare
4 ardei grasi,taiati bucatele
1 kg rosii foarte coapte, taiate marunt
o mana de masline
3 lingurite oregano
2 lingurite busuioc
2 linguri ulei de masline
5-6 catei de usturoi, pasati
sare si piper,dupa gust
busuioc proaspat, pentru ornat

Se caleste ceapa in uleiul de masline, timp de 3-4 minute, amestecand din cand in cand.

Se adauga ardeiul gras si se continua calirea inca 2-3 minute.

Se adauga rosiile, busuiocul si oregano. Se acopera cu un capac si se fierbe la foc potrivit, amestecandu-se din cand in cand, pana cand sosul a scazut.

La final se adauga usturoiul si maslinele si se lasa inca cateva minute pe foc.

Se orneaza cu busuioc proaspat.

Couscous vegetable burger

For 10 pieces:

1/2 cup couscous
300 g (10,5 oz) potatoes, cooked and mashed
1 zucchini, grated
3 carrots, finally grated
1/2 cup sweet corn (canned)
1 cup frozen peas
1 large onion, grated
5 cloves of garlic, mashed
a pinch of cumin powder
2 teaspoons rosemary
1 teaspoon thyme
2 teaspoons  paprika powder
fresh chili pepper / chili flakes, to taste (optional)
salt and pepper, to taste

Prepare couscous according to package directions. Allow to cool.

Mix all ingredients until you get a paste.

Divide the mixture into 10 equal parts. Form balls and than press between your hands about approx. 1,5-2 cm. thick (0,5 inch).

Fry the burgers in a little bit of oil, about 5 minutes on each side.

You can also bake them in the oven, on medium heat, for about 15 minutes on each side.

Cut the burger bun in half, add the burger and salad, finely chopped onions, tomatos, mustard,  ketchap, vegan mayonnaise or garlic sauce, to taste.cus-cus burger5

Pentru 10 bucati:

1/2 cana cuscus
300 g cartofi, fierti si pasati
1 dovlecel, dat prin razatoarea mare
3 morcovi, dati prin razatoarea mica
1/2 cana porumb (din conserva)
1 cana mazare congelata
1 ceapa mare, data prin razatoarea mare
5 catei de usturoi, pisati
un varf de cutit chimion pudra
2 lingurite rozmarin
1 lingurita cimbru
2 lingurite boia dulce
ardei iute/fulgi de ardei iute, dupa gust (optional)
sare, piper, dupa gust

Se prepara cuscusul conform indicatiilor de pe pachet. Se lasa putin la racit.

Se amesteca toate ingredientele pana cand se obtine o pasta omogena.

Se imparte compozitia in 10 parti egale. Se fac mingiute si se preseaza intre palmele mainilor pana la o grosime de aprox. 1,5-2 cm.

cus-cus burger4Burgerii se prajesc in putin ulei, aprox. 5 minute pe fiecare parte.

De asemenea, se pot coace in cuptor, la foc mediu, 15-20 minute pe fiecare parte.

Se taie chifla în două, se adaugă burgerul și se asezonează cu  salată, ceapă tăiată fin, și după preferințe cu muștar, ketchap, maioneză vegană sau sos de usturoi.cus-cus burger5
