Romanian eggplant salad
3-4 eggplants
1 medium onion, very finely chopped
25 ml of olive oil
25 ml sunflower oil
salt, to taste
Heat the grill and bake the eggplants on each side until they are soft inside. Peel while they are still warm. Drain well and let them cool.
Process the eggplants with a food processor (not very fine). Remove into a bowl and add the oil, the onion and salt to taste. Mix well.
Serve on bread with tomatoes.
If you have guests for dinner you can serve eggplant salad stuffed tomatoes. Cut the tops of the tomatoes, pick the core with a teaspoon and leave them to drain upside down, for a few minutes. Fill them with eggplant salad and garnish with parsley.
Salată de vinete
3-4 vinete
1 ceapă medie
25 ml ulei de măsline
25 ml ulei de floarea soarelui

Se coc vinetele pe plită sau grătar până când se înmoaie. După ce s-au copt se curăță de coajă cât sunt înca fierbinți. Miezul se lasă la scurs pe un fund de lemn. Când s-au răcit se toacă cu ajutorul unui satâr de lemn/robot de bucătărie (nu foarte fin), se încorporează uleiul și se adaugă ceapa tăiată foarte fin. Se potrivește de sare.
Pentru mese festive se pot servi roșii umplute cu salata de vinete. Se taie căpăcelele roșiilor, se scoate miezul cu ajutorul unei lingurițe (se poate folosi la ciorbe, sosuri etc) și se lasă la scurs cu gura-n jos. După ce s-au scurs bine se umplu cu salata de vinete și se ornează cu frunze de pătrunjel.
